Help & registration

Getting registered to sell fermented food

Selling fermented food commercially can be achievable. What you must do depends on what you make, how you sell it and where you operate. Start with the official pathway for your jurisdiction.

New Zealand risk pathways

These classifications are specific to New Zealand. Always confirm the result for the complete product and process using MPI’s tool.

Medium risk

National Programme 2

Bread bakeries commonly sit here. Registration, written food-safety practices, records and verification are required; fees vary.

Higher control

Food Control Plan

Some higher-risk or more complex manufacturing requires a Food Control Plan. The correct pathway depends on the product and process.

Use My Food Rules

Fermented vegetables, sauces and drinks can vary by ingredients, process, pH, storage and intended use.

Fermented beverages and other products may fall under NP3 or another plan. Confirm with MPI My Food Rules before relying on a classification.

United States

Registration guide

Home-food rules are set primarily by states and may also involve county or city requirements. Loaf must verify the applicable pathway rather than assume one national rule.

1

Identify every relevant regulator

Start with your state agriculture or health department and your local health authority. The FDA’s home-business guidance explains the division of responsibility.

2

Check whether your loaf qualifies

Confirm that your recipe, fillings, toppings and storage method fall within your state’s cottage-food or home-processing rules. Do not assume every sourdough product is treated alike.

3

Confirm sales channels and limits

Check permit or training requirements, annual sales limits, allowed venues, online ordering, pickup, delivery and interstate restrictions. These rules change and vary substantially.

4

Use the required state label

Follow the exact ingredient, allergen, producer and home-kitchen disclosure wording required by your state. Loaf will need state-specific templates rather than one US label.

5

Upload current evidence

Provide Loaf with the permit, registration, training certificate or other evidence required for your location and product. Approval will be jurisdiction-specific.

Important: This is general guidance, not legal or regulatory advice. Rules change and individual recipes or sales methods can change the required pathway. Confirm with the relevant authority or a qualified adviser before trading.
